Moroccan food is probably the best-known and most individual of all North African cuisines. The most popular dishes are tagines and couscous, kebabs and roasts, salads, vegetable dishes, mint tea and some wonderful pastries. Harissa - a vibrant spice mix is used extensively and the food is highly flavoured and quite low in fat. It's a healthy delicious way to eat. The Moroccan recipes included in this book are traditional but not overly complicated - you can still cook a great tagine without using the pot (also called a tagine) it's traditionally cooked in.
