Thai food is becoming mainstream: pad thai, tom yum goong and char-grilled beef salad can be found on most cafe menus. They're included in this book, but so are lesser-known recipes including sticky pork and crisp fish salad. Thai food is fresh-tasting, light and healthy, with the flavours of lemon grass, basil, lime and coriander mingling with fish sauce and chilli. Most dishes are fast to cook, and nearly all are low fat. Recipes include preparation and cooking time, nutritional info and number of servings. When you're serving Thai meals, why not do it the Thai way: serve soups, salads and main courses all at the same time with freshly boiled plain rice.
